oil pressure fluctuating at highway speeds

i have a 98 gmc k1500 with a 5.7 , , back in sept my oil pressure started fluctuating at all conditions , even idle , replaced sensor , and it seamed to straighten ou , went on road trip , after about 4-5 hours driving , i noticed pressure fluctuating again , from 30 to occasionally zero and back with check gauge coming on when hitting zero, oil level is good , fresh oil change , no leaks , recertified gauges , not sure what to check next, quality filter with oil change

Probably a good idea to hook up a mechanical oil pressure gauge and see if you actually have stable oil pressure or if your losing it.
