May be a silly question, are you sure you have the correct pads? Are the pads OE or aftermarket? sometimes, cheap aftermarket pads don’t fit well. And your gut is right about mixing pad types on 1 side.

You will need a wiring diagram and need to trace out what circuits come off the fuse that is blowing and what it could have in common when shifting to reverse. Also good visual inspection for rub throughs and other harness damage is a good idea.

Since there is no testing where you live, it really depends on what you can put up with. You could end up with a catalyst code with a cheap converter, but if you can live with the check engine light on go for it.
Not sure what the question is, but is seems likely the mechanical timing likely has slipped or failed and bent a lot of the valves (or caused something else in the valve train). Will probably take some teardown to know for sure, but I’d be thinking of a replacement engine.
First thing I would check is the belt, sometimes it is hard to tell if it is worn. Beyond that, it’s a pretty simple device, check for abnormal noises, leaks, etc.

P0744 is an intermittent code, so could be the solenoid or other things. Debris in the fluid could cause this code. IF it’s not too hard, I would pull the pan and look for metal in the pan, that could give you a quick answer on which option to try.
You will need a wiring diagram and need to trace the circuits when the issue is happening. When you say all the lights were on, is that interior or headlights or both?

If you have had the car for 100K and not changed the clutch, it’s probably time for a good look at it, especially if you don’t know if the clutch was done before you got the car.

I would try putting the rear up on jackstands and have a helper drive the truck while looking to see what is going on. Since it happened after a bump, I would check things like leaf springs, u joints, the center carrier bearing and as ou mentioned the engine and transmission mounts.

VWs of that vintage are sort of notorious for ABS controller failure. The best thing to do is see if the sensor signal is being received at the ABS conroller, if they are then it is likely an issue in the controller. Just went through this in the spouses 2009 jetta (different codes), but in my case (fortunately) there was a recall.
Is the new TB an aftermarket? What I think you are saying is the MAP sensor has moved with the new TB. If you have enough harness length, you could try the MAP in the TB. I would worry about how the ECM is calibrated for the other MAP sensor placement.
P1797 is for park neutral switch malfunction. I would diagnose that first since it may be causing the issue.Could be the switch, wiring or (given is is a Jaguar) something else. Also, have you checked the recalls or service bulletins for any issues related to this?
